As you’ve probably noticed, bartenders are increasingly borrowing the codes of the culinary arts. They seek a balance of flavors, are constantly on the lookout for new tastes, make their own preparations and like to embellish their creations with various spices and aromatic herbs.
This time, let’s turn the tables by using gin to spice up a delicious tomato sauce. A fun and definitely different way to enjoy its herbaceous notes and natural freshness. Give free rein to your creativity by playing with its subtle fragrances. Less than an hour’s work to enjoy a comfort food dish ideal for any occasion. Easy to make and enjoyed by all epicureans.
Ingredients – serves 4
- 1 onion
- 2 garlic cloves
- 1kg tomatoes
- 2 tablespoons tomato paste
- Olive oil
- 1 dash of gin
- Thyme, oregano
- Salt and pepper
- 400g pasta of your choice
Preparation
Coarsely chop onion, garlic and tomatoes. Heat the oil in a large saucepan and sweat the garlic and onion until transparent. Add the tomato paste, stir and incorporate the tomatoes. Simmer for 20 minutes, covered, then remove the lid for a further 20 minutes. Add herbs and gin, season with salt and pepper and cook for 5 minutes over medium heat.
To serve, sprinkle the pasta with a few halved cherry tomatoes, creamy burrata or arugula leaves for a play of textures. And above all, a good dose of Parmesan cheese.
