Tasting notes:
Nose: Rich and nuanced nose, juniper raised by a floral bouquet then a pleasant bouquet of wine notes.
Palate: On the palate, an attack of botanical, fresh and fruity aromas with a floral touch. The sweetness of the muscatel brings a lot of roundness and finesse in the mouth. SAB’s Gin’s vinous nobility is expressed in pure tasting but also in cocktails.
Raw material: Maceration of juniper berries in French grain alcohol with 14 herbs. Addition of Chardonnay and Pinot Noir brandy 100% Burgundy and BIO.
Still: The distillery works with one of the
the last mobile stills in Burgundy. This Müller steam still consists of three small copper vessels. Steam is the method used in perfumery. It allows to obtain a flexibility and a precision in the aromas.
Distillation: Distilled at the distillery in winter. Chardonnay and Pinot Noir wine brandy is added before and after distillation. The macerate is heated by steam injection in copper vases that capture the nuances of the aromas of each botanical.
Aging: Sab’s Gin is aged for 6 months in stainless steel tanks to round out the flavors.
Bottling: Bottled by hand. A pink wax cap is then placed by hand.
