Produced from 10-year-old blue agaves and distilled in a column still, Don Fulano blanco tequila is then aged for 60 days in stainless steel tanks. This is a fruity tequila, marked by prune juice, williams pear, amaretto, rancio and walnut.
PROFILE:
Nose: pleasant, particularly sweet. Very fruity, with prune and Williams pear juice. Almond liqueur, amaretto. Mint. The pepper is evanescent.
Palate: soft, very pleasant. Mint leaf, then returns to very ripe fruit. A hint of rancio and walnut. Slight bitterness.
Finish: lingers on mint, returns to pepper, then quickly leaves the palate available.
The agaves used to produce Don Fulano Tequila are selected plant by plant, their maturity varying irregularly. Fermented with yeast naturally present on the agaves, the juice is distilled in copper and stainless steel stills in a distillery that has specialized in tequila production for four generations. The different versions are aged in first and second-fill French oak barrels for up to 5 years. Bottling is done by hand in bottles produced locally by craftsmen.
