Where does Baltazar gin come from?
It all started in 1984 in Hérisson, a small village in the heart of France, where Mr. Perrier, also called Mr. Balthazar, made the first distillation. David Faverot took over in 2013 by perpetuating the style and improving the recipes. Distilled into ironing stills, corn, barley and rye are harvested locally and form the basis of his brew for his famous Hedgehog whisky.
How is this gin made?
Artisanal realization from plants & fruits of Auvergne picked by hand and preserved according to the principles of herbalism:
Juniper (Haute-Loire), Lemon balm, Chamomile, Aronie, Angélique, Achillée, Sage, Elderberry, Nettle, Physalies, Toasted Walnut Kernels, Medlars

Truly passionate, he is in perpetual quest to perfect his micro-distillery and in constant search of new recipes. He creates for the first time a gin made exclusively from organic ingredients from Auvergne: Balthazar gin!
