Where does Sothis gin come from – Maxime Chapoutier ?

The botanicals used come from the terroirs of the Rhone corridor. The great complexity of this geological crossroads is the result of intense erosion and fluvio-glacial relics associated with Alpine folds, which are made up of marl, clayey limestone and alluvial deposits stretching to the magmatic and metamorphic edge of the Massif Central.

How is this gin made?

Alcohol of organic grapes, common juniper, cade, chamomile, yarrow, immortelle, thyme, verbena, sweet clover.

To avoid competition and to enhance the aromatic profile, a first batch of plants is infused in the wine alcohol for 24 hours. Then it is assembled with the rest of the botanicals including juniper. Finally, the whole is distilled for more than 4 hours so that each element can express itself harmoniously. During distillation, the elements will evaporate from the most volatile to the least volatile. This makes it possible to separate
substances according to their evaporation temperature. However, the distillate is not just a sum of components. During the tasting, each molecule will influence and interact with the others in order to bind to the sensory receptors like a puzzle, like an aromatic engineering.
